Apple and Cinnamon Oatmeal with Creamy Mascarpone

A heavenly combination - warm and comforting oatmeal with a sweet and creamy mascarpone topping.
Ingredients
For the oatmeal
- 1/2 cup gluten free rolled oats
- 1 cup almond milk
- 1/4 cup applesauce
- 1 apple, diced (I used a pink lady apple)
- 1/2 tsp cinnamon (optional)
- Pinch of salt
- Optional: sweetener, to taste
For the mascarpone topping
- 1 heaped tablespoon mascarpone
- Maple syrup, to taste
- A pinch of salt
Instructions
- In a small saucepan over a medium heat, add your oats, milk, applesauce, diced apple, cinnamon and salt. Cook your oatmeal over medium heat until it reaches your desired consistency.
- Meanwhile, mix together your maple syrup and mascarpone.
- Once your oats have finished cooking, pour them into a bowl, garnishing with sliced apple if desired and topping with your mascarpone mix.
