Cocoa Banana Granola













Ingredients
  • 1 1/2 cups gluten free oatmeal
  • 1 tsp cocoa powder (for a richer chocolate flavour, add more!)
  • 1/4 tsp salt
  • 1/2 medium banana, mashed (about 1/4C)
  • 1 tsp vanilla extract
  • 2-3 tbsp maple syrup
  • 1/4 cup egg whites (about 2 egg whites)
  • Optional: nuts, seeds, dried fruit, chocolate chips (add in afterwards)


Instructions
  1. Preheat oven to 180°C/355°F.
  2. Line a baking sheet with baking paper.
  3. In a large bowl add oats and salt.
  4. In a medium bowl mash banana and add in cocoa powder, vanilla, maple syrup, egg whites and any add ins (except chocolate chips, if using).
  5. Pour out the granola mixture onto the baking sheet and spread out - leaving some big clusters.
  6. Bake for 30-40 minutes or until granola is crisp, stirring gently halfway through.
  7. Store in an airtight container for ~1 week.
