Cocoa Banana Granola
Ingredients
- 1 1/2 cups gluten free oatmeal
- 1 tsp cocoa powder (for a richer chocolate flavour, add more!)
- 1/4 tsp salt
- 1/2 medium banana, mashed (about 1/4C)
- 1 tsp vanilla extract
- 2-3 tbsp maple syrup
- 1/4 cup egg whites (about 2 egg whites)
- Optional: nuts, seeds, dried fruit, chocolate chips (add in afterwards)
Instructions
- Preheat oven to 180°C/355°F.
- Line a baking sheet with baking paper.
- In a large bowl add oats and salt.
- In a medium bowl mash banana and add in cocoa powder, vanilla, maple syrup, egg whites and any add ins (except chocolate chips, if using).
- Pour out the granola mixture onto the baking sheet and spread out - leaving some big clusters.
- Bake for 30-40 minutes or until granola is crisp, stirring gently halfway through.
- Store in an airtight container for ~1 week.
